A second use, if you want it Because the steel is solid and thick, the same board can sit over a gas burner or charcoal grill and become a plancha-style cooktop. Heat travels evenly across the large surface, so medium settings often replace the high heat you would use on a bare grate. Start low and increase gradually. Do not use on an electric coil or glass-top range—the board can damage the stove.
